Ingredients
- 1 large zucchini sliced and cut in half
- 1 small head broccoli
- 1 red pepper diced
- 1 yellow pepper diced
- 1 orange pepper diced
- 3/4 lb green beans trimmed and cut in half if needed
- 2 medium red potatoes cut into 1" pieces
- 3 chicken sausage links sliced
- 1/3 cup olive oil
- 2 tsp paprika
- 1 Tbs parsley
- 1 Tbs oregano
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
- Fresh chopped parsley optional
Instructions
- Preheat oven to 375.
- Line a large rimmed baking sheet with tin foil and spray with non-stick cooking spray.
- Add your vegetables to baking sheet and drizzle with olive oil and stir around to coat.
- Sprinkle with seasonings and stir around again to coat.
- Place in oven and bake for 20 minutes, then stir to ensure even cooking.
- Bake for another 10-20 minutes checking for doneness after 10 minutes.
- Remove from oven and sprinkle with fresh chopped parsley if desired.
