Ingredients
- For the Chicken:
- 2-3 large boneless and skinless chicken breasts
- 4 tbsp flour (all purpose or plain)
- 4 tbsp finely grated fresh Parmesan cheese
- 2 tsp salt
- 1 tsp garlic powder
- 1/2 tsp Black cracked pepper
- For the Sauce:
- 1 1/4 cup half and half or heavy cream (or evaporated milk)
- 1/2 cup finely grated fresh Parmesan cheese
- 2 tbsp fresh parsley, to serve
- 5 tbsp olive oil
- 2 tbsp butter
- 1 small onion finely chopped
- 1 garlic peeled
- 1 1/4 cup chicken broth (stock)
Instructions
- Season chicken using garlic powder, pepper and salt.
- Use a shallow bowl, mix flour and parmesan cheese.
- Enter the chicken in the flour mixture.
- Heat 2 tbsp of oil and 1 tbsp of butter, use medium-high heat.
- Fry the chicken breast until golden, set the chicken aside.
- Wipe the pan with a paper towel, repeat with the remaining oil and butter and chicken breast.
- Reduce heat to medium, saute onions in remaining oil in pan until soft.
- Mash 6 cloves of garlic with a blunt tip on the back of the knife.
- Put the remaining oil into the pan and heat it.
- Mix with onions.
- Saute the clove of garlic and garlic cloves until fragrant 2-3 minutes.
- Add the stock, reduce by half for 5 minutes.
- Reduce heat to medium-low, pour the cream, bring the sauce to low heat slowly for 2-3 minutes, combining all the flavors.
- Mix the pamresan cheese, then continue cooking for 2-3 minutes until the cheese has melted.
- Add the chicken back to the pan, simmer 2-3 minutes.
- Garnish with parsley and black pepper, serve on the table.
